Przedmiotem zainteresowań badawczych prof. UPP dr hab. Dominika Kmiecika są termiczne przemiany tłuszczów wykorzystywanych w procesie smażenia produktów spożywczych oraz jakość tłuszczu będącego składnikiem żywności smażonej oraz wyrobów cukierniczych o średniej i wysokiej zawartości tłuszczu.

Zakres badawczy obejmuje zagadnienia dotyczące m.in.: degradacji termicznej olejów wykorzystywanych w procesach smażenia; przemian steroli roślinnych w czasie przechowywania i ogrzewania olejów; przemian kwasów tłuszczowych w czasie przechowywania i ogrzewania olejów czy reakcji powstawania i oceny zawartości izomerów przestrzennych kwasów tłuszczowych o konfiguracji trans w procesach technologicznych.
